+# Sourdough bread with seeds and grains
+

+
+## Ingredients
+
+### For the preparation
+
+- 100g grain of choice (e.g. rye, spelt and wheat)
+- 40g linseed
+- 30g sesame
+- 30g sunflower seeds
+- 600g water
+
+### For the bread
+
+- 400g sourdough
+- 200g water (25-35°C)
+- 200g rye flour
+- 300g wheat flour
+- 20g sea salt
+- 2tsp bread spice
+- soaked seeds and grains
+
+## Directions
+
+### Preparations (the day before)
+
+1. Feed your sourdough starter for the next day.
+2. Boil the grain in 500g water for 45 minutes.
+3. Put the seeds and 100g water into a bowl.
+4. Store everything in a locked bowl overnight (13-16h).
+
+### Bread
+
+1. Remove leftover water from the seeds and grains
+2. Stir all ingredients for the bread and knead them well.
+3. Let the dough rest for 5 hours in warm (25-30°C) conditions.
+4. Preheat the oven to 250°C.
+5. Bake for up to 20 minute with steam.
+6. Release the steam and turn the heat down to 150°C.
+7. Bake for another 50-60 minutes

+## Ingredients
+
+- 150g boiled potatoes in there skin
+- 350g wheat flour
+- 50g whole rye flour
+- 11g salt
+- 150g water
+- 250g sourdough
+
+## Directions
+
+1. Boil the potatoes
+2. Peel of the skin of the potatoes (let them cool down a bit)
+3. Stir all ingredients and knead them well.
+4. Let the dough rest for 5 hours in warm (25-30°C) conditions.
+5. Preheat the oven to 250°C.
+6. Bake for up to 10 minute with steam.
+7. Release the steam and turn the heat down to 220°C.
+8. Bake for another 35 minutes
